Stout Chocolate Brownies with Cookie Dough Chunks

Keep the bad times at bay, and load up on cookie dough! These brownies are packed full of chocolatey, chunky goodness that you can only get from Félix & Norton’s ready-to-bake cookie dough. Stout chocolate flavour and a healthy handful of cookie dough chunks, these brownies are going to have you falling head-over-heels in love with your oven.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 2/3 cup unsalted butter
  • 6 oz unsweetened chocolate, roughly chopped
  • 1 1/2 cups brown sugar, packed
  • 1/2 cup stout beer
  • 3 large eggs
  • 1 tsp vanilla extract
  • 9 pieces Félix & Norton cookie dough, thawed and cut into quarters

Prep Time: 15 minutes

Cook Time: 40 minutes

Yield: 16 ooey, gooey, rich and chewy brownies

Directions:

Preheat oven to 350° (180°C). Grease a 9 inch (23 centimetre) pan and line with parchment paper or foil - long enough to create an overhang on two sides. Lovingly grease the foil or paper.

In a large bowl, sift together the flour, cocoa powder, salt and baking powder. Set aside.

Now it’s time for the magic to begin. In a medium microwavable bowl, combine the butter and chocolate. Heat in microwave, on high, in 20 second intervals, stirring after each, until chocolate is melted. Allow to cool; 5 minutes.

In a large bowl, whisk together the sugar, beer, eggs and vanilla until smooth. Whisk in the buttery and delicious chocolate mixture.

Fold in the dry ingredients in two additions, mixing after each until just combined.

First, set aside 12 Félix & Norton cookie quarters (3 whole cookies worth), and fold in the remaining cookie quarters. Plunk them right into the heart of the batter!

Pour batter into prepared pan and delicately smooth it out. Playfully scatter the reserved cookie quarters overtop - welcome to cookie dough paradise.

Cover the pan tightly with foil and bake; 25 minutes. Remove foil and bake for 15 more minutes. Here’s a tip: when you stick a skewer into the centre, and a few moist crumbs emerge, these brownies are good to go.

Cool in the pan, remove and cut into the 16 squares that will change your life.
