Baking SECRETS from the Félix & Norton Smile Squad

The Félix & Norton Cookie Truck is a smile delivery service, run by our amazing Smile Squad. The Smile Squad spent all summer delivering thousands of smiles, and thousands of freshly baked cookies, far and wide! Now they’re ready to take a break and share some of their baking secrets for baking Félix & Norton cookies at home...

Patience Is Paramount

Patience is a virtue, and the last thing you want to do to a Félix & Norton cookie is rush it into the oven too fast. We like to let them sit for five minutes, at Cookie Truck temperature, before putting them into the oven. This way, the cookies will bake evenly!

Keep Things In Rotation

While the wheels on the Cookie Truck go round and round, our baking sheets do the same. Not all ovens are the same so we rotate our baking sheets 180º halfway through the baking process. This is so all of our precious cookies have a chance to enjoy the same intensity of heat.

Let Your Cookies Rest

When you give love, you get love, and Félix & Norton cookies are made with nothing but love! That’s why we like to take our time, while making sure not to overbake our cookies.

After 8 or 9 minutes in the oven, pull your cookies out and let them sit. Even if it’s difficult to hold yourself back from digging in, give them a few minutes to rest. The absolute perfect texture will be yours if you let them sit for just a few minutes.

These are just a few of our most important baking secrets to make the perfect cookies in the Félix & Norton cookie truck. Don’t forget, though, that taste is relative - so don’t be afraid to experiment. You’ll quickly learn to bake the perfect cookie according to your own collection of baking secrets, and that’s a thing of beauty!
