Cookie Truffle Recipe

Ingredients

  • 12 Felix and Norton cookies - I used Ebony & Ivory cookie dough, but these would be great with any of their four fun flavours

  • 2-3 tablespoons cream cheese, softened

  • White chocolate

  • Dark chocolate

  • Blue, orange and red food colouring

  • Sprinkles for decorating

Directions

  1. Bake Felix and Norton cookies according to instructions.

  2. Once cooled, crumble the cookies by chopping with a knife or using a food processor.

  3. Mix the crumbled cookies and cream cheese in a bowl until well combined.

  4. Take the cookie mixture and form small balls with your hands.

  5. Place on baking sheet and refrigerate for 30 minutes.

  6. Start melting the white chocolate while the cookie balls are being refrigerated. Bring about an inch of water to a simmer in your saucepan. Set the heatproof bowl in the mouth of the pot, making sure the water doesn't touch the bottom of the bowl. Stir chocolate occasionally as it softens. When you have just a few small unmelted chunks, remove bowl from heat. Add a few drops of food colouring to achieve the desired colour.

  7. Remove cookie balls from refrigerator. Using a spoon or fork, dip cookie balls one at a time into melted chocolate. Place them back on baking sheet and immediately top with sprinkles.

  8. To create snowmen faces, melt dark chocolate. Using a toothpick, draw the eyes and mouth. Add orange food colouring to the white melted chocolate to create the nose and red food colouring to create the cheeks.

  9. Refrigerate 1 hour until firm.
